Steamed Vegetables & Gluten Free Cheese Sauce
I wonder where the sweet potato casserole tradition started. Whatever way, I’m super grateful for it because it’s delish! Now, since there are two gluten freebees in our fam, & the original recipe calls for flour, we make one big casserole using a 9×13 pan & a smaller GF casserole, using a 9×9 pan.
I love this recipe because the top is so yummy! I have tried sweet potato casseroles where the top tastes & feels like it’s straight brown sugar. Yuck! Biting into it was like chewing on a spoon full of sugar. I think this year I’d like to cover the top with mini marshmallows & get them lightly brown! YUM! Here’s the recipe:
Casserole
2 large cans sweet potatoes
1/2 cup sugar
3/4 tsp salt
1/2 cube butter, melted
3 eggs
3/4 cup milk
1 tsp vanilla
Mix together & put in greased 9×13 pan
Topping
1 cup brown sugar -we usually do a little under a cup
1/3 cup all purpose gluten free flour
1/3 cube butter, melted
1/3 cup shredded coconut
1 cup chopped walnuts
Mix together & sprinkle evenly on top. Bake at 350 for 25 minutes.
