Gluten Free Old-Fashioned Macaroni & Cheese

Sigh of relief - Use your noodle - Gluten Free Old-Fashioned Macaroni & Cheese

Do you make Old Fashioned Mac ‘N Cheese for Thanksgiving? It’s seriously my favorite dish! I, know! So weird. But seriously, I LOVE it. In order to make it, you HAVE to have the BEST noodles. I’m sure your well aware of gluten free noodles. You know, how they fall apart. And they don’t taste the best? And…. Yeah, they just don’t hold up very well.

Well, I have made Gluten Free Old-Fashioned Macaroni & Cheese with two kinds of noodles. When I used Bionatureae Organic Gluten Free noodles, the dish did NOT turn out.

After the dish was cooked, all the noodles pretty much just meshed together. I promise I didn’t cook them for too long. Cross my heart. I am well aware that if you over cook noodles they fall apart. These ones just didn’t hold up. They weren’t man enough for the job. They might be great for a dish like easy peasy pasta but NOT my good ole fashioned Mac ‘n Cheese. Sorry Bionaturae!

You need to have heavy duty, good quality noodles for this recipe. I use Tinkyada Brown Rice Elbow Pasta. These are perfect! You can’t even tell they are GF, I swear! And they hold up super well! One thing to know about this recipe is that you have to make sure you don’t add too much milk or it washes out the flavor & texture. But add too little milk & it becomes dry.

Gluten Free Old-Fashioned Macaroni & Cheese Recipe

2 lbs cooked Gluten Free elbow macaroni
1 lb sharp cheese
Milk
Salt
Pepper

Pour enough milk to cover the bottom of the pan. Add a layer of macaroni. Salt & pepper. Add a layer of shredded cheese. Repeat layers until the pan is full. Pour milk until it comes 1/3 of the way up from the bottom of the pan. Bake at 375 until cheese melts or is golden brown on top.
