Growing up, Oatmeal Raisin Cookies were my dad’s favorite. All of us kids loved my mom’s Chocolate Chip Cookies so she would make both. Well, I’m very proud of my taste buds- they finally matured! The other day, Bri had a craving for these babies &Β we haven’t been able to stay out of them since. What I like about this recipe is:
1. You don’t have to use a whole ton of flour so it’s relatively inexpensive.
2. It has oat’s in them & we LOVE our gluten free oats over here!
3. The raisins moisturize the cookie, giving it a soft texture. Most Oatmeal Raisin cookies I’ve tried are hard & crunchy.
4. I can have as many as I want without getting sick! That’s a big deal. π
Just to give you a heads up about how good these are, before I made them Colby was telling me that he’s never cared too much for Oatmeal Raisin Cookies. I told him that was because he hadn’t had mine! He said, “Everyone always say’s that. But every time I end up trying ‘their recipe’, I just don’t like it.”
Guess what!? He likes these! Nicely done, us!
Gluten Free Oatmeal Raisin Cookie Recipe:
3/4 shortening
1 cup brown sugar
1/2 cup sugar
1 egg
1/4 cup water*
1 tsp vanilla
Mix ingredients together until smooth.
Add:
1 1/4 cup gluten free all purpose flour
1/2 tsp baking soda
1 tsp salt
3 cups certified gluten free oatmeal
Mix together. Add raisins & stir. Bake at 350 for 8-10 minutes.
*Boil raisins in water for a few minutes. Save the raisin water for your 1/4 cup water.

Oh I’m so glad you liked them! How did they turn out with the butter instead of shortening? I’ve always been worried about replacing the shortening because I have heard it spreads them out & prevents it from setting up.

Well I actually had to add more butter and than just the exact amount of shortening, just so it would bind together. It seems to not look as pretty as yours but it still tastes really good.
