Healthy Gluten Free Pumpkin Cookies

Ingredients
  • ½ C + 3 tsp gluten free buckwheat flour
  • ½ C + 3 tsp gluten free oat flour
  • ½ C + 3 tsp gluten free all-purpose flour
  • ½ C + 3 tsp almond flour
  • ¾ C pure maple syrup
  • ¼ C butter, softened
  • 1¾ C pumpkin puree
  • 1 egg
  • 1 tsp gluten free vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp ground nutmeg
  • ½ tsp ground cloves
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • chocolate chips
Instructions
  1. Preheat oven to 350*
  2. Combine flours, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt;set aside.
  3. In a medium bowl, cream together butter & maple syrup.
  4. Add pumpkin, egg, and vanilla to butter mixture, and beat until creamy.
  5. Mix in dry ingredients until incorporated.
  6. Add as many chocolate chips as you desire!
  7. Drop on cookie sheet by tablespoonfuls, flatten slightly.
  8. Bake for 18-20 minutes in the preheated oven.
