Guilt-Free Black Bean Brownies

Guys. I found it. The one. I’ve been searching for the perfect brownie since I was diagnosed. My mom used to make those Ghirardelli brownie’s that came in a box. I’m not going to go into detail about the texture, taste, and smell, it’s too painful but they are one of my most coveted gluten desserts. Although I’m sure if I tried them now they would be too rich for me BUT I think I would still enjoy a slice or two every now & then regardless! And doesn’t it make it worse just knowing that the option is gone? It’s like just because you can’t have them, you want them more? #storyofourlives

I have been looking everywhere for that texture. Every time I see a  new brownie box, or when there are free samples at an expo, I’m always looking for that exact texture & flavor. When I see Pinterest gluten free brownie recipe’s or the many black bean brownies recipe’s I’ve tried, to no avail, there has always something missing! I don’t like my brownies light & fluffy like my cake & I certainly don’t like them too fudgy. There’s a balance. There needs to be enough fudge & fluffiness & it shouldn’t be too rich.

Well guess what!? I FOUND them!!! Want to know the best part!? As I was pinning & baking all sorts of black bean brownie recipes, I came across the perfect recipe! I tweaked it just a tad & seriously, it’s perfect. For the past few weeks, my mom always has a batch in her fridge! Black Bean Brownies

These beauties are super easy to make! Just throw everything into your Blendtec & pour it all into your pan! That’s my kind of recipe! They are gluten free & completely flour-less! On top of being flour-less, the recipe calls for black beans in its place! Black beans are high in fiber, protein & iron. Instead of sugar, I use organic grade A maple syrup so it doesn’t mess with your blood sugar levels so much. So really you can eat these without having any guilt whatsoever, right? 😉

Guilt-Free Black Bean Brownies

Ingredients
  • 1 can black beans rinsed, drained
  • 2 eggs
  • ½ cup pure organic maple syrup
  • ½ cup cocoa powder
  • 2 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ chocolate chips (optional)
Instructions
  1. Preheat oven to 350
  2. Combine all ingredients (except chocolate chips) in a high powered blender
  3. Process until well incorporated (1-2 minutes)
  4. Mix in chocolate chips
  5. Pour into well greased 9x9 pan
  6. Top with additional chocolate chips (optional)
  7. Cook for 30-40 minutes
  8. Serve plain, with chocolate syrup & ice cream
  9. Store in refrigerator

    These look SO good. I am going to have to veganize these ASAP! I’ve made black bean brownies before, but these look SO much better.
