Things have been a little crazy this week but we survived! It was this beauty’s birthday yesterday!

One thing you have to know about Bri is she has the biggest heart, EVER. I haven’t met another person more concerned for other people’s feelings, than Bri. She often forgets to take care of herself because she’s too busy taking care of others. I’m so grateful for her. This pretty much sums up our lifetime as sisters. Happy Birthday Bri! I hope it was amazing!

Bri requested a Cherry Upside Down Cake as her bday cake. I had only made it gluten free once before & I used Betty Crocker’s Yellow Cake Mix. I didn’t care too much for it that time so I altered it even more this time. It turned out awesome! Everyone loved it! The best part is.. IT’S SUPER EASY!!! Here’s the recipe:

Cherry Upside Down Cake

2 big cans of cherry pie filling
1 bag of Pamela’s yellow cake mix
2 cubes of room temperature butter

Preheat oven to 350

Mix cake mix & butter together with a fork to create a crumbly consistency.
Pour both cans of pie filling into a 9×13 glass pan. Crumble the cake mix on top to create the top layer.
Bake at 350 for about 45 minutes or until top is lightly brown.
